After 5hrs at 110c . The results......Cooked perfectly using my digital thermo.  Results are fantastic... medium rare ?

This is next in a couple of weeks time ?

I last did this about 10 years ago. Will be doing it a bit more often now.

I remeber you posting pics on here of some salt cured bacon many years ago... I've done it a few times since!

Amazing, compared to the shitty bought stuff.

I didn't even smoke it though... mostly becasue it got eaten before I had a chance! :lol:

You don't have to smoke it Allan, but I do think it's better. You just have to make sure you either dry cure it or brine it properly. I prefer to dry cure my bacon. From research I've come up with my own recipe which family and friends like.

Most of you have probably seen my BMBBQ. Thats not me in the pic, usually my mates that come round don't want food poisoning so leave it up to them.IMG_0714.jpg
