where is the water going

I had the same problem with my 525, and it ended up a cracked head

Could be a heater or radiator hose.... you might have "cutit"

97 E36 316 I M43 ?? I'm assuming... bad word

Have a look at the back of the head. Theres a plastic water outlet there. It'll probably be leaking slightly and evaporating on the block or the exhaust. If you cant find the leak, pressure test it or get professional help before it all turns to custard on you.

BTW..they also leak in the same area with the headgasket too, at the back, just below the same plastic fitting
